整體上瑞記海南雞飯,在雞肉烹調上的火候掌控上,處理的頗為精確,雞肉不帶血,亦不因久煮而使的肉質失去甜味、乾柴。
對了,除了雞翅部位之外,瑞記海南雞飯是去骨提供的,很方便品嘗。店內的雞肉目前有兩種選擇土雞與肉雞,雖說士雞的價格大約是肉雞的一倍,但 旅人 建議喜歡品嘗雞肉料理的饕客,可試試土雞。不論是肉或雞皮的口感,都較肉雞更另人激賞。

#海南雞 飯在19世紀末至20世紀初的華人移民潮中,隨著海南籍的移民,傳入馬來亞、暹羅與印尼一帶。在馬來西亞,海南雞飯多被簡稱為「雞飯」,在各城鎮的美食中心、茶餐廳都可見其蹤,在食用時都會搭配特製的辣椒醬與黑醬油。

根記載,馬來半島一帶海南移民較多的城鎮如馬六甲、檳城、新加坡,甚至是吉隆坡已經出現一些沿街販賣「雞飯」的海南籍小販,挑擔或雙手拿著竹籃,一邊放白斬雞肉,一邊裝油飯。

目前爭論那個城市是#海南雞飯 在馬來半島的發源地,已沒有多大的意義;但可以肯定的是,在後期隨著新加坡的獨立,當地以華人為主導,比起馬來西亞,新加坡政府對於當地傳統華人美食較為注重,同時運用各種資源為海南雞飯進行包裝及行銷,讓當地海南雞飯得以衝出區域,而成為世界知名料理。
